Makes:

4 minutes in the waffle maker

Ingredients:

VEGAN EGG

  • 2 tbsp of freshly grinded flax seeds
  • 6 tbs of water

 

WAFFLE

  • 1/3 cup rolled oats
  • 1/3 cup oat flour 
  • 1/3 cup almond flour 
  • 1 tbsp chia seeds
  • 1 tbsp sunflower seeds
  • 1 tbsp hemp seeds
  • 2 tbsp coconut flour
  • 1 tbsp matcha powder
  • 1 pinch sea salt
  • 1 tbsp melted coconut oil
  • 2 tbsp maple syrup
  • 2/3 cup coconut milk
  • 1/3 cup coconut flakes

Instructions:

This is my favorite waffle! The combination of matcha and coconut is nutritious and delicious! If you haven’t had matcha, you should try it. It’s made with green tea leaves and so packed with nutrients.
 

For the vegan egg: Grind the flax seeds and place the flour in a cup, small glass or bowl.

Add the water, mix well, and reserve. Let it sit to thicken – this is your vegan egg.

In a large bowl add all the dry ingredients and mix them well.

Add the wet ingredients finishing with the vegan egg.

Mix well and place half of the batter at a time into a waffle maker.

Enjoy!

P.S.: You can replace one vegan egg (1 tbsp flax meal + 3 tbsp water) with one mashed banana.

It adds sweetness and flavor.
