Makes:

8 – 10 portions

10 minutes

Ingredients:

1 lb of navy beans or 2 cans

1 cup of cooked quinoa

1 crown of broccoli

2 medium carrots

1/2 red onion, chopped

2 garlic cloves, chopped

1 tbsp olive oil

1 laurel leaf

parsley and green onions to garnish

salt and pepper to season

Instructions:

If using raw beans – soak them overnight. Change the water and cook them with salt and one laurel leaf until soft.

In a sauce pan, sauté the onions with olive oil

When the onions are clear add the garlic.

If you have a homemade broth of any kind use it. Otherwise, add water to the mixture and make your own broth adding the carrots and broccoli.

When the carrots are tender but still firm add the beans and the quinoa.

Let it simmer for 5 minutes and add salt and pepper.

Garnish with parsley and green onions.
