4 min in the waffle maker

Dry Ingredients:
1/3 cup almond flour
1/3 cup of rice flour
1/2 tsp baking powder
1 tbsp pepitas
1 tbsp hemp seeds
1 tbsp chia seeds
1/4 tsp salt
Wet Ingredients:
VEGAN EGG** – 2 tbsp flax meal (freshly grinded flax seeds) + 6 tablespoons of water
1/2 medium zucchini, grated
1/2 tbsp olive oil
1/2 tbsp apple cider vinegar
1/3 cup of vegetable milk of choice(*)
Instructions:
To make your vegan egg: Grind the flaxseeds and add 6 tablespoons of water. Mix well and let it sit to thicken until you prepare the other ingredients.
Mix all the dry ingredients in one large bowl.
In another bowl mix all the wet ingredients.
Pour the dry mixture over the wet.
Lastly, add the vegan egg and mix well.
Let the batter sit for 5 minutes before you add it to the waffle maker.
This time is critical for the dough to bond as we’re not using eggs. You might need to let it an extra minute in the waffle maker to make it easier for it to come out without breaking.

(**) If you don’t mind using eggs you can then replace the vegan egg with 2 regular eggs lightly beaten.
