Makes:

2 waffles

Prep Time:
15 minutes
Cooking Time:

4 min in the waffle maker

Dry Ingredients:

1/3 cup almond flour

1/3 cup of rice flour

1/2 tsp baking powder

1 tbsp flax meal (freshly grinded flax seeds)

1 tbsp pepitas

1 tbsp hemp seeds

1 tbsp chia seeds

1/4 tsp salt

Wet Ingredients:

1/2 zucchini, grated

1/2 tbsp olive oil

1/2 tbsp apple cider vinegar

1/3 cup of vegetable milk of choice

Instructions:

Mix all the dry ingredients in one large bowl.

In another bowl mix all the wet ingredients.

Pour the dry mixture over the wet.

Let it sit for 5 minutes before you add it to the waffle maker.

The time is critical for the dough to bond as we’re not using eggs.
