Makes:

1/4 gallon

15 minutes
Cooking Time:

8-10 minutes

Ingredients:

  • 3/4 cup raw cashew

  • 4 Medjool dates, pitted

  • 2 cups hot water

  • 1 cup coconut milk

  • 2 cups ñame root, cooked and peeled

  • 1 pinch of salt

  • Juice of 3 limes

Instructions:

To hydrate the cashews and dates, add them to two separate cups of hot water for at least 2 hours prior to start this preparation.

Once hydrated, drain the cashews and add them to a blender with the water with the dates.

Add the coconut milk and salt and blend it for 30 seconds before adding the pieces of ñame one by one.

When the mixture is creamy then add the lime juice.

The final texture is of yogurt but with no probiotic benefits. 

Enjoy cold!
