4 minutes in the stove top


  • 1 cup raw cashews
  • 1 can hearts of palm diced
  • 1 cup mushrooms of choice
  • 3 whole tomatoes
  • 1/2 chopped onion
  • 1 minced garlic clove
  • 1 tbsp olive oil
  • salt and pepper to season
  • parsley to garnish


Hydrate the cashews first boiling them in 2 cups of water for 15 minutes.

Let it cool down.

Once it’s cool blend and add water if necessary.

Reserve the cream.

Sauté the onions in olive oil.

Add the garlic followed by the mushrooms and tomatoes.

Add the hearts of palm and let it simmer for 2 minutes.

Add the cashew cream and seasonings.

Let it simmer for 2 more minutes to thicken, and voila!
