Ingredients:

1 small red onion, chopped

1 medium size cucumber, chopped

1 ripe tomato, diced

2 cups fresh parsley, chopped

1/2 cup quinoa, cooked

1/2 cup chickpeas, cooked (optional)

1/2 cup carrots, diced (optional)

Juice of 1/2 lemon

Salt and Pepper to season

Olive oil

Instructions:

Just mix all the ingredients.

Enjoy!

P.S.: The traditional Middle East recipe asks for Bulgur, but I like to use Quinoa instead.
