Ingredients:

5 pitted Medjool dates

3/4 cup cooked and cooled quinoa

1/2 cup ground flaxseed

1/4 cup unsweetened cocoa powder

3 tablespoons drippy peanut butter

2½ tablespoons pure maple syrup

1 teaspoon vanilla extract

1 tablespoon brewed coffee (optional)

Instructions:

If you don’t enjoy quinoa in your salad here is an easy recipe for adding this superfood into your diet. The Quinoa Truffles from Chef Carleigh Bodrug from @plantyou make a delicious protein-packed snack.

Place the dates in a bowl of hot water and allow them to soften, for about 5 minutes.

Drain, saving the water for another recipe.

In a food processor, combine the dates, quinoa, ground flaxseed, cocoa powder, peanut butter, maple syrup, vanilla, and coffee.

Process until a smooth batter is formed.

Using a teaspoon and your hands, form from 8 to 12 truffles of about 1/2-inch diameter.

Roll them on additional cocoa powder if desired.
