30 – 40 minutes in the oven

Ingredients:
4 eggs
2 whole Navel oranges (no seeds)
3/4 cup coconut oil
1 cup maple syrup or 1 1/2 cups coconut sugar
1 cup oat flour
1 cup almond flour
1/2 teaspoon vanilla extract
1 tablespoon baking powder
Instructions:
This recipe is super easy. It’s a healthy adaptation of Leo Paixão’s Orange Cake. Leo is a famous Brazilian Chef from my very home town of Belo Horizonte – MG.
Preheat the oven to 350oF.
Grease a cake pan.
Cut and discard only the top and bottom of the oranges, take the seeds out and cut them in 8 pieces.
In a blender, add the eggs, the oranges, vanilla, maple syrup, and the oil. Blend them well. Then add the flour and blend again. At last, add the baking powder and mix well.
Pour the batter into the pan and bake for 40 minutes.
Once it’s ready you can add drops of lemon juice.
The smell is unbelievable!
