Ingredients:

Cake base

1 cup of oat milk

6 Earl Grey tea bags

5 1/2 cups rolled oats

2 tablespoons baking powder

1 tablespoon baking soda

1 tablespoon cornstarch

1/2 cup Greek yogurt or vegan cultured yogurt

3/4 cup unsweetened apple sauce

2 tablespoons vanilla extract

1 cup coconut sugar

Earl Grey Icing

1 cup unsalted, raw cashews soaked overnight or boiled per 10 minutes

1/2 cup Greek yogurt or vegan cultured yogurt

Zest and juice of 1/2 lemon

1/4 cup pure maple syrup

What’s better for a celebration than a cake? And yes, it is possible to make a healthy cake! The Earl Gray Tea Cake from Chef Carleigh Bodrug from @plantyou is a delicious option. This is as healthy as a cake can be.

Instructions:

Preheat the oven to 350oF.

Line an 8-inch round cake pan or spray it with oil.

In a pot over medium heat, bring the oat milk to a boil.

Remove from heat and place all six tea bags in the pot, allowing them to steep for at least 10 minutes.

Remove the tea bags and set them aside.

Place the oats in a blender and blitz into a flour consistency.

Transfer to a large bowl along with the baking powder, baking soda, and cornstarch.

In a second bowl, mix the yogurt, applesauce, vanilla, coconut sugar, and steeped oat milk.

Cut the top off three of the used bags and pour the leaves into the yogurt mixture. Stir until evenly dispersed.

Reserve the other tea bags for later.

Mix the wet and dry ingredients until a smooth batter is formed.

Transfer to the cake pan, and bake for 35 or so minutes.

For the icing, combine the listed ingredients in a blender with the remainder of the three tea bags.

Blend until a smooth, thick icing is formed, adding more liquid as needed.

Once the cake is cooled, pour the icing onto the center and spread over the top.

Garnish with fruit if desired.
