40 minutes in the oven

Ingredients:

2 pounds of ripe tomatoes

3-4 roasted garlic cloves

1 tablespoon olive oil

Salt and Pepper to season

Fresh basil leaves to garnish

Instructions:

Preheat the oven to 400oF.

Line a baking sheet with a silicone mat.

Cut the tomatoes in half lengthwise, brush them with olive oil, sprinkle salt and pepper, and add them to the baking sheet facing down.

Also, add 3-4 garlic cloves (with peel) wrapped in aluminum foil to the sheet pan.

Let it roast for 40 minutes.

Then add them to a saucepan and blend using a hand mixer. You can also use a blender.

Adjust the taste with more salt and pepper and maybe a little more olive oil.

Garnish with basil leaves.
