Makes:

2 waffles

4 min in the waffle maker

Dry Ingredients:

1/3 cup almond flour

1/3 cup of rice flour

1/2 tsp baking powder

2 tbsp flax meal (freshly grinded flax seeds)

1 tbsp pepitas

1 tbsp hemp seeds

1 tbsp chia seeds

1/4 tsp salt

Wet Ingredients:

1 cup fresh spinach

1/2 tbsp olive oil

1/2 tbsp apple cider vinegar

1/3 cup of vegetable milk of choice

Instructions:

First, grind the flax seeds and put them in a small bowl.

Add 6 tablespoons of water and mix well to make a vegan egg. Let it sit.

Mix all the dry ingredients in one large bowl.

In another bowl mix all the wet ingredients.

Pour the dry mixture over the wet.

Lastly add the vegan egg and mix.

Let the batter sit for 5 minutes before you add it to the waffle maker.

The time is critical for the rice to absorb the moisture and the batter to bond.
