Ingredients:

1/2 cup raw cashews, soaked for at least 2 hours or boiled for 10 minutes

1/2 pound green beans trimmed and halved

1/2 medium onion chopped

1 pint of mushrooms

3 tablespoons of extra virgin olive oil

Salt and pepper

This is how to make an easy and healthy version of this classic.

Instructions:

In a blender, combine the strained, hydrated cashews with 2 cups of warm water, salt, and pepper.

Blend it until creamy.

Add more water to adjust the consistency to your liking.

In a skillet, sauté the green beans in olive oil until they are bright green. Reserve.

In the same skillet, sauté the onions in olive oil and add the mushrooms.

Let it cook for 5 to 10 minutes.

Add the cream and simmer for 2 minutes to thicken.

Pour the cream over the green beans.

Broil on high for a few minutes until it’s golden.
