Makes:

Cooking Time:

10 minutes in the stove top

Ingredients:

  • 1 cup of Orzo pasta
  • 3/4 cup of cashews
  • 1 cup of oyster mushrooms shredded
  • 2 tablespoons of chopped onions
  • 2 tomatoes diced
  • 1 tablespoon of olive oil
  • 2 tablespoons of tamari sauce
  • paprika, salt, and pepper to season
  • parsley to garnish

Instructions:

Hydrate the cashews boiling them in 2 cups of water for 15 minutes.

Cook the Orzo according to packaging instructions, drain and reserve.

Season the mushrooms with tamari sauce, paprika, salt, and pepper.

Let it cool down.

Once it’s cool blend and add a little water, if necessary.

Reserve the cashew cream.

Sauté the onions in olive oil.

Add the mushrooms and tomatoes.

Add the cashew cream and seasonings.

Lastly, add the orzo and gently mix it into the sauce.
